It's tough to find a copy of the Santa Fe Reporter hanging around at the Red Enchilada. In fact, it's tough to find anything at all written predominantly in English. Instead, Spanish-language periodicals are in easy reach of the voluminous jar of pickled escabeche.

In Santa Fe by way of El Salvador- something demonstrated by the charming, hand-painted mural map of Central America drifting in a deep blue sea- the Red Enchilada recipe book represents a down-home, sensible fusion of pan-American ingredients, with a solid Central American core.

The pupusas, thick tortillas stuffed with quesillo and ayote, are like friendly little pets that you can eat when you're tired of stroking their supple, oven-hot skin. The enchiladas, of course, are tasty evidence of the ready Salvadoran adaptation to New Mexico-style chile.

Unconcerned with effete flavor profiles and lofty culinary concepts, the Red Enchilada delivers simple, satisfying goodness and prompt, friendly service. One thing you won't find here? Inflated prices. This is an establishment where a heaping plate of red will still leave you in the black. (Zane Fischer)
