The Cowgirl is slammed just about any night of the week. Sometimes five deep, the bartenders pour beer, mix margaritas and open up gallons of bourbon, seemingly without breaking a sweat. “They are some of the most interesting people in Santa Fe,” Nicholas Ballas, co-owner of The Cowgirl, says. “They’re bright, creative, fun to hang out with and they don’t take any crap.” Ballas certainly knows his staff,—which is both “professional and sassy”—well. Walk up to the bar with a smile and an ice cold beer is a moment away, but march up there with an attitude and expect those smiling faces will get served first. It makes sense: A night on the town should be fun and a bartender is a big part of that. The staff at The Cowgirl seems to love what they do too. There’s very little turnover, making it a good old-fashioned saloon where you know everybody’s name.
