It's tough to find a copy of the Santa Fe Reporter hanging around at the Red Enchilada. In fact, it's tough to find anything at all written predominantly in English. Instead, Spanish-language periodicals are in easy reach of the voluminous jar of pickled escabeche.

In Santa Fe by way of El Salvador- something demonstrated by the charming, hand-painted mural map of Central America drifting in a deep blue sea- the Red Enchilada recipe book represents a down-home, sensible fusion of pan-American ingredients, with a solid Central American core.

The pupusas, thick tortillas stuffed with quesillo and ayote, are like friendly little pets that you can eat when you're tired of stroking their supple, oven-hot skin. The enchiladas, of course, are tasty evidence of the ready Salvadoran adaptation to New Mexico-style chile.

Unconcerned with effete flavor profiles and lofty culinary concepts, the Red Enchilada delivers simple, satisfying goodness and prompt, friendly service. One thing you won't find here?
